Cherry and spinach salad

This salad makes a quick and easy lunch. The addition of goats cheese adds a touch of creamy luxury. Also ideal as an accompaniment to your BBQ.

Quantities to be decided by you, depending on how many you are feeding.


  • Ripe cherries, washed and pitted
  • Baby spinach leaves
  • 2 tsp red wine or sherry vinegar
  • Extra virgin olive oil
  • Salt and pepper
  • Soft, mild, rindless goat's cheese
  • Handful of hazelnuts, lightly toasted

  1. Toss the cherries and spinach leaves together
  2. Dress with the vinegar and a glug of olive oil, then season well
  3. Add a few blobs of goat's cheese and scatter the hazelnuts over the top
