Chicken satay

Homemade chicken satay is a great replacement for the takeaway meal and much healthier too. It tastes fresh, spicy and delicious, sure to be a hit with the whole family.


  • 1 lemongrass stick, finely chopped
  • 4cm piece fresh root ginger, peeled and roughly chopped
  • 2 TBS crunchy peanut butter
  • 1 TBS vegetable oil
  • 1/2 TBS fish sauce
  • 1/2 tsp mild curry powder
  • 2 TBS creamed coconut
  • 2 TBS water
  • 4 chicken breasts, cut into finger-sized strips
  • Small handful fresh coriander, roughly chopped
  • Plain yogurt and a large green salad, to serve

You will also need:

  • 8 medium bamboo skewers

Serves 4


  1. Soak the skewers in cold water and set aside
  2. Put the lemongrass, ginger, peanut butter, vegetable oil, fish sauce, curry powder, coconut and water into a blender, whizz until well combined but still chunky
  3. Pre-heat the grill to medium
  4. Put the chicken into a bowl and pour over the satay sauce, stirring to coat
  5. Thread the chicken onto the skewers and arrange on a non-stick baking sheet
  6. Grill for 7-10 minutes, turning occasionally, until cooked through
  7. Serve with a dollop of yogurt and a large green salad
