Chilled pea and chorizo/ham soup

A super quick and easy soup. Full of rich flavour from the chorizo or ham. Great to have at home or to take out and about. As this is a chilled soup it is ideal to take to work during the summer months.


  • 500ml hot chicken stock, made up with boiling water from a kettle
  • 450g frozen peas
  • 1 shallot, finely chopped
  • 1/4 small red chilli, finely chopped
  • Zest and juice of 1/2 lemon
  • Few dashes of Worcestershire sauce
  • Large handful of curly-leafed parsley
  • 100ml Greek yogurt
  • 75g chorizo or ham, diced

Serves 10

  1. Pour the hot stock over the peas and leave for 5 minutes
  2. Empty into a blender and add the shallot, chilli, lemon juice, Worcestershire sauce and parsley, season, then blend until smooth
  3. Chill for least 2 hours
  4. Mix together the yogurt and lemon zest, and season
  5. Cover and chill
  6. Divide the soup among 10 cups, garnish each with a drizzle of lemon yogurt, then top with chorizo/ham pieces and a grinding of black pepper
  7. Serve immediately
