Classic caesar dressing

If you love this dressing make extra and store it in the fridge to add flavour and zing to your salads or lunchtime wraps. Just because this is a caesar dressing does not mean it has to be kept for the chicken caesar salad, oh no! If you like it use it. 


  • 2 medium egg yolks
  • 1 tsp Dijon mustard
  • 1/2 garlic clove, finely chopped
  • Juice of 1/2 lemon
  • 2 anchovy fillets
  • 1 TBS pine nuts
  • 25g grated parmesan
  • 50ml white wine
  • 75ml mild olive oil
  • Salt and pepper


Amber tick

  1. Put all of the ingredients into a blender and whizz for 1 minute until thick and creamy
  2. Season to taste
  3. Store in a screw-top jar in the fridge for up to 3 days; shake well before using
