Cottage cheese or yogurt with chopped vegetables

A good choice! Make up a container of this to have to hand. For a snack use a tablespoon to top two oat cakes, or use two tablespoons to have on its own..

Can also be used to fill a chickpea pancake for lunch or supper. Add two tablespoons per pancake. The chickpea pancakes can be found here or simply use shop bought wraps.


  • A carton of full fat cottage cheese or plain yogurt
  • 1 stick of celery, chopped
  • 2 inch piece of cucumber, chopped
  • 1/2 green pepper, chopped
  • 1 spring onion, sliced
  • 1/2 small carrot, chopped
  • Any other green vegetables, as desired (mange touts, fennel, broccoli e.t.c.) - chopped
  • 2 TBS fresh herbs of your choice - chives, parsley, dill, basil, coriander, tarragon finely chopped
