Cucumber and fruit salad

Talk about a multi-tasking recipe! Cucumber and fruit salad is just that. Enjoy this dish for breakfast, lunch or a main meal. So quick and easy and just so delicious you will want to have this time after time.  In fact why not make life easy and multiply up the ingredients to feed yourself, partner or children for the next couple of days. Keep the made-up cucumber and fruit salad in the fridge to keep it fresh and the dressing in a separate jar or container and add it as required to avoid the cucumber and fruit salad becoming soggy. 


  • ¼ cucumber, thinly sliced
  • ¼ honeydew melon, cubed or balled
  • 6 strawberries, sliced
  • Fresh coriander for garnish

For the dressing:

  • 2 tsp virgin olive oil
  • 2 tsp lemon juice
  • Cayenne pepper (pinch)
  • Ground coriander (pinch)

To turn this into a main course meal suitable for either lunch or dinner, make the following changes:

Increase the above ingredients three-fold for a woman and four-fold for a man.

Now add a protein of your choice - below is some inspiration to make this dish truly delicious:

  • 3-4 oz feta cheese
  • 3-4 oz goat's cheese
  • Smoked mackerel fillet (easy for lunchtime)
  • Poached salmon fillet, hot or cold
  • Sea bass, hot or cold
  • Chicken fillet, hot or cold

Serves 1 as a snack

  1. Mix together the dressing ingredients and pour over the cucumber, melon and strawberries. Ground black pepper may also be added.
