Falafel and hummus pitta

Falafel and hummus pitta is a delicious, quick and easy lunch. We suggest you prepare this ahead and then stuff into pitta pockets or use wraps if you prefer to make an easy take-to-work lunch. Perhaps you have a very long day ahead and will be home late. If this is in the fridge waiting for you then it's an easy late evening meal served in wraps or pittas. 

Ingredients

  • 2 medium carrots, peeled and thinly shredded or coarsely grated
  • 1/3 iceberg lettuce, shredded
  • 1 red pepper, deseeded and thinly sliced
  • 1/2 cucumber, thinly sliced
  • 20g fresh coriander or chives, finely chopped
  • 125g hummus
  • 100ml Greek yogurt
  • 4 TBS vinaigrette dressing
  • 4 pitta bread
  • 2 x 250g ready-cooked falafel
  • 1 lemon, cut into wedges, to serve

Serves 4

Method

  1. Toss the carrots, lettuce, pepper, cucumber and herbs together in a large bowl
  2. In a small bowl, mix together the hummus, yogurt and vinaigrette
  3. Split the pitta bread in half and fill the pockets with the carrot  and salad vegetable mixture
  4. Tuck 3-4 falafel into each pitta, top with a little hummus as a sauce and serve with lemon wedges to squeeze over
