Fruity salsa

Fruity salsa is one of our favourite recipes. Very quick and easy to make, double up the ingredients to make extra for later in the week. Fruity salsa is very versatile and can be used as a snack to top oatcakes or to enjoy with yoghurt (leave out the garlic on this occasion) or to spoon over cooked fish, chicken dishes or BBQ food. Bring the flavours of summer to your food and enjoy.


  • 1 large ripe mango, thinly sliced
  • 1 small charentais melon, thinly sliced
  • Zest of 1 orange, finely grated, plus juice of 1/2 the orange
  • 1 garlic clove, crushed
  • 3 TBS white wine vinegar
  • 4 TBS extra virgin olive oil
  • Handful of flat-leafed parsley, freshly chopped
  • Around 300g sliced, smoked duck or chicken to serve

Serves 6 as a snack


  1. Put the mango, melon and orange zest into a bowl. Adding the orange juice, garlic, vinegar, olive oil and parsley
  2. Season, mix together gently, then cover and chill for at least two hours
  3. Divide the salsa among six plates, spooning over any extra dressing, and serve with slices of smoked duck or chicken
