Healthy banana pancakes

Healthy banana pancakes make a delicious change to the traditional pancakes cooked with wheatflour.  We have also made a couple of delicious suggestions for toppings. Eat and enjoy!

Please note these pancakes are only suitable for weight maintenance.

Serves 1


  • 2 eggs

  • 1 ripe medium banana


  1. Mash banana with a fork. Beat two eggs and combine with mashed banana or use a food processor and combine until smooth.

  2. Heat your frying pan over a low heat. Add a small amount of olive oil and wipe out the excess with kitchen paper. Next, pour your banana batter to form a circle. Flip after the edges begin to cook.

  3. Allow the pancakes to cook through - a matter of seconds.

Serve with any of the following toppings

  • Greek yoghurt with blueberries, raspberries, strawberries or blackberries.
  • Or mix a little vanilla essence into your yoghurt to increase the sweetness and dollop onto the top of your banana pancakes.
