Leek vinaigrette salad

Leek Vinaigrette salad is an easy dish to prepare for a take-to-work lunch and it takes just a few minutes to organise. The trick is to combine all the ingredients at lunchtime to avoid the extra salad leaves becoming soggy.

Quantities to be decided by you, depending on how many you are feeding.

Ingredients

  • Leeks
  • Hard boiled egg(s) or ham
  • Mixed salad leaves
  • Vinaigrette

Method

  1. The night before, blanch some extra leeks, pat dry and mix into a vinaigrette
  2. The next day, pack a spare hard-boiled egg (excess breakfast), or some ham, and a bag of mixed salad leaves
  3. Combine at lunchtime
