Lemon and olive oil coleslaw

Lemon and olive oil coleslaw is brilliant in the summer months and makes a fast and very easy lunch time dish. Or if you are short on time this is perfect for a larger evening meal. All of the family is sure to enjoy this with the sweetness of the apples and the crunch of the walnuts. 

Quantities to be decided by you, depending on how many you are feeding.


  • Lemon
  • Olive oil
  • Red cabbage
  • Carrot
  • Spring onion
  • Apple
  • Walnuts
  • Duck breast - sliced, skinless, smoked


  1. Combine red cabbage, carrot, spring onion, apple and walnuts
  2. Dress in lemon and olive oil
  3. Try eating with sliced, skinless, smoked duck breast
