Melon and prosciutto skewers

Melon and prosciutto skewers is a taste of summer on a stick. Enjoy this for breakfast, lunch or main meal with a large salad or simply just as a snack. The whole family will enjoy this combination of flavours. Very fast, very easy, very enjoyable.


  • 1 charentais melon, small
  • 150g ball mozzarella
  • 20g packet of basil
  • 12 slices prosciutto
  • 1 shallot, finely chopped
  • 1 tsp mustard powder
  • 2 TBS balsamic vinegar, good quality
  • 2 TBS extra virgin olive oil

Serves 2 for main course 

Serves 4 for a snack


  1. Using a sharp knife, remove the skin from the melon, then scoop out and discard the seeds
  2. Cut the melon into 12 wedges
  3. Cut the mozzarella into 12 chunks and pull out 12 basil leaves from the packet
  4. Thread the melon, prosciutto, mozzarella and basil alternately on to 4 wooden skewers and divide among 2 (or 4) plates
  5. Chop the remaining basil and put in a bowl with the shallot, mustard powder, balsamic vinegar and olive oil
  6. Whisk together, then transfer to a jug
  7. Pour over the skewers to serve
