Oriental omelette

This recipe takes a little forward planning but a lot of ease! By ensuring you have bought all of the ingredients included below, you will find that you will then have the majority of them in your cupboard/fridge for the next following weeks, making it all the more easy to sling together this dish when there is little time available. Prep right through to the finished meal is a matter of minutes! 

Tip: Follow the omelette with some fresh fruit, such as a clementine or half a papaya with lime juice squeezed over.


  • 1 tsp soy sauce
  • 2 medium eggs, beaten
  • 1 tsp sake (or dry sherry)
  • 100g North Atlantic prawns
  • 1 TBS extra virgin olive oil
  • 4 slices back bacon, fat trimmed and finely sliced
  • 1/2 tsp root ginger, peeled and finely sliced
  • 2 spring onions, trimmed and finely sliced

Serves 1

  1. Beat the eggs with the soy sauce and sake
  2. Squeeze any excess water out of the prawns and set aside
  3. Place a non-stick frying pan over a medium-high heat. Once hot, add the oil, followed by the bacon
  4. Stir-fry the bacon for a couple of minutes until it starts to crisp
  5. Add the ginger and spring onions, cook for a few seconds, then add the prawns, followed immediately by the beaten eggs
  6. Swirl them around the pan until the base starts to set. Continue to cook for a further minute or until the omelette is almost set, then fold it over and cook for another minute
  7. Slip onto a plate and serve
