Pepper dip

This simple yet delicious recipe makes it the perfect dip for any occasion. Whether it's a family gathering, a barbeque or just a snack for you to grab whilst you are dashing through the house or office. Make up a batch and keep it in the fridge, then it's ready for whenever's convenient!

Ingredients

  • 4 whole roasted red peppers in oil, drained
  • 300g tub hummus
  • Juice of 1/2 lemon
  • Bunch of chives - chopped, with a few left whole for garnish
  • Freshly ground black pepper

Serve with a selection of raw vegetables chopped into crudites:

  • Courgette
  • Fennel
  • Radicchio
  • Baby corn
  • Small pak choi leaves
  • Radishes
  • Baby mushrooms
  • Cucumber
  • Cherry tomatoes

 

Method

Amber tick 

  1. Put the peppers, hummus and lemon juice into a food processor or blender with the chopped chives
  2. Season with freshly ground black pepper and whizz
  3. Spoon into a serving dish, snip whole chives over the top
  4. Serve with cruites - take some inspiration from our ingredients suggested above
