Poached chicken with vegetables

This dish requires little to no effort, and yet feeds a whole family if you wanted to! This one pot recipe means you can busy yourself with anything else that needs doing whilst the dinner cooks itself!


  • 2 chicken breasts
  • 1/2 stalk celery, chopped
  • 1 leek, cut into matchstick size
  • 1 shallot, finely chopped
  • 1 bay leaf
  • 1 TBS butter or olive oil
  • 2 TBS lemon juice
  • 2 TBS fresh parsley or coriander, or 1 TBS thyme (dried herbs can be used - reduce to 1 tsp)
  • 200ml water
  • Salt and pepper

A good choice! Very easy and delicious.


  1. In a heavy saucepan with a lid, brown the chicken breasts on each side with a little of the butter or olive oil
  2. Remove the chicken and place the remaining butter or oil in the pan along with the celery, leek, shallot and bay leaf
  3. Season the chicken and place on top of the vegetables. Add lemon juice, water and fresh herbs
  4. Cover and simmer on a medium heat for 30-40 minutes or until chicken is cooked
  5. Stir occasionally and add more water if needed
