Rocket and Grapefruit Salad with Grilled Fish

This dish is a great recipe for a warmer time of year. The lighter evenings lend to the delicate flavours throughout this salad and we're sure it'll go down well with everyone. 


Serves 2


  • rocket, 500g
  • 1 pink grapefruit, peeled and cut into small segments
  • 2 white fish fillet such as cod or hake
  • 1 green apple, thinly sliced
  • fresh mint leaves (optional)
  • small handful of green olives, stoned and halved (optional)



  • 2 tbsp extra virgin olive oil
  • 1 tsp seasame oil
  • 2 tbsp balsamic vinegar
  • 1 tsp light soy sauce
  • 1 garlic clove, crushed
  • 1 tsp Dijon mustard
  • 1 pinch freshly ground black pepper
  • 1 pinch salt


  1. Whisk together all of the ingredients for the dressing. Place both fish fillet in a shallow dish and pour over half of the dressing, turning the fish to coat.
  2. Plate up the rocket leaves, grapefruit segments and apple slices.
  3. Grill the fish fillets for 2-3 minutes (depending on thickness) per side, until cooked through and place on top of the rocket salads.
  4. Sprinkle with fresh mint leaves and halved olives before pouring on the remaining half of the dressing and serve immediately.
