Salad Jar - Halloumi, Tomato, Green Beans and Couscous

A recipe that will help you on your way to eating five-a-day - it can be stacked up in a mason jar, with the lid secured and taken to work for a fresh crunchy lunch.

Serves 1


  • 50g couscous, cooked
  • 80g halloumi, sliced
  • 1 tomato, cut into 1cm chunks
  • 1 tsp capers
  • 60g green beans, blanched
  • 2 sprigs mint, leaves picked
  • 1 tsp extra virgin olive oil
  • freshly ground black pepper



  1. Heat a griddle pan over a high heat before adding the halloumi slices and griddle for 3-4 minutes, or until golden brown stripes appear on the cheese surface.
  2. Place the couscous in the bowl/jar you plan to eat from and add the halloumi, tomato, capers, green beans and mint.
  3. Drizzle with oil and season with freshly ground black pepper. Eat straight away or pack in a mason jar ready to take to work.
