Salad Jar - Smoked Mackerel, Watercress, Dill and Bulgur Wheat



This salad gives you a healthy boost of omega-3’s, along with that fresh and delicious taste you’ll need mid-way through your day.
Serves 1
Ingredients
- 50g bulgur wheat, cooked
- 1 fillet smoked mackerel, broken into bite-sized pieces
- 5 radishes, sliced
- 50g watercress, trimmed, use sprigs
- 2 sprigs dill, chopped
- 1 tbsp extra virgin olive oil
- 75g low-fat natural yoghurt
- freshly ground black pepper
Method
- Place the cooked bulgur wheat in the bowl/jar you plan to eat from. Add the smoked mackerel, radishes, watercress and dill.
- Drizzle over the oil and season with freshly ground black pepper. Finish off with your dollop of yoghurt.
- Eat straight away or have sealed, fresh and ready to hand when lunchtime arrives.
