Salmon, watercress and mango salad

Why not try making extra of the mango and watercress dressing to have on another salad later in the week? The refreshing flavours are bound to awaken you! Also bear in mind that this recipe is flexible to fit you, please feel free to change your source of protein from salmon to something else you would prefer. The leaner the meat the better - such an turkey or chicken. 


  • 1 ripe mango
  • Small bunch of watercress, chopped
  • 1 red onion, finely sliced
  • 2 TBS extra virgin olive oil
  • 2 tsp white wine vinegar
  • Juice of 1 small orange
  • 1 TBS fresh parsley, chopped
  • 4 salmon fillets, cooked

Serves 4

  1. Cut the mango into bite-sized pieces and put in a large bowl with the watercress and onion
  2. In a small bowl, whisk together the extra virgin olive oil, white wine vinegar, orange juice and parsley
  3. Season, then toss the dressing through the salad
  4. Divide the salmon fillets among four plates, add the salad and serve immediately
