Simple Mid-week Stir-Frys

Simple mid-week sir-frys are designed to make your evening meal as simple and easy as possible.  At the end of a busy day it is all too easy to fall into the habit of beans on toast or a can of soup or pizza because it's easy.  Often the perception is that good food requires effort, takes time to prepare and time to cook.  Well good food can happen in minutes with minimum fuss, time and effort.  From start to finish this will take no longer than 10 minutes.

The quantities will depend upon how many you are cooking for and the recommended portion size according to your programme - see My Healthy Eating Plan for details.

Chicken thighs are more cost effective and tastier than chicken breasts.  Slice your meat into strips to reduce the cooking time.

Choose thai green curry paste or thai red curry paste or any curry paste you prefer.  The key is to purchase a paste and not a sauce.  The sauces have extra, non-essential nasties whereas the pastes are simply spices ground up and already prepared for you.


  • Chicken thighs or breasts or beef steak or pork loin
  • A whole large bag of stir-fry vegetables per person
  • Thai green/red curry paste/curry paste of preference
  • Coconut milk. You will need around 3 TBS per person


  1. Add a sprinkling of water to your wok or deep frying pan (no need for oil simply use your fingers to flick some water into the bottom of the pan)
  2. Add your chicken or beef or pork and cook for a couple of minutes
  3. Next add a large teaspoon of your paste to the meat , cook for 1 minute
  4. Next add your coconut milk to the meat, cook for 1 minute
  5. Next add your pack of stir-fry vegatables to the meat and cook for a further 3-4 minutes or until cooked.

Serve with a small portion of rice or noodles.  And there you have an instant and delicious, nutritious and filling evening meal.
