Tomato, ham and olives

It's not just salads that are quick and easy lunches to take to work. This dish is filling and delicious and requires minimal time and effort for maximum tastiness. 

(Hint: If you're short on time in the mornings, prepare this the night before - it makes the cooking time much faster.)


  • 1 medium-sized ripe tomato, cut in half or 4 cherry tomatoes or 2 tinned tomatoes
  • 1 spring onion finely sliced (optional)
  • ½ tsp olive oil
  • ½ tsp dried or fresh oregano, marjoram or basil
  • Salt and pepper
  • 1 slice of ham, about the size of your palm (use 3 slices if very thin or substitute with sliced turkey, chicken or tofu)
  • 5 olives
  • Handful of spinach leaves - weight loss replacement for olives

  1. In a small frying pan, over a medium heat, saute the tomato in olive oil for about 3 minutes, stirring or turning over if in halves
  2. Add the herbs, spring onion and ham, and cook for 2-3 minutes (or if excluding the olives, add spinach leaves to wilt for a few seconds) before tipping the mixture into the centre of your wrap and rolling it up
  3. Season to taste and serve with olives (optional)
