Valentine's Recipe Of The Week - Steamed Thai Fish

Valentine's Day is a great opportunity to cook something a little different, so we thought we would present you with this delicious dish for two. The flavours are delicate and light - enjoy!

Tips:

  • Don't feel as though you have to use trout with this recipe, use any fish - we just found that trout was complimentary with the flavours

serves 2
 
Ingredients

  • 2 trout fillets (each approx. 140g)
  • small knob of fresh ginger, peeled & chopped
  • 1 garlic clove, chopped
  • 1 small red chilli, seeded & finely chopped
  • zest & juice of 1 lime
  • 3 baby pak choi, quartered lengthways
  • 2 TBS soy sauce


Directions

  1. Place both pieces of fish on a large piece of foil, and sprinkle over the garlic, ginger, chilli and lime zest. Drizzle the lime juice over the top of this and then place the pak choi around and on top of the fish. Pour the soy sauce over the pak choi and loosely seal the foil package. (Make sure that you leave space at the top of the package so that the steam can circulate in order to cook the fish). 
  2. Steam for 15 minutes in a steamer. (If you haven't got a steamer,  place the parcel on a small heatproof dish on top of a pan of gently simmering water - cover with the pan lid and steam).
