Recipe Of The Week – Grated Courgette Burgers
Grated courgette burgers are delicious served hot or cold with a salad. With the addition of the chilli and mustard these vegetarian burgers are tasty and are brilliant stuffed into a pitta bread for take-to-work lunches.
- Squeeze out as much liquid as you can from the courgette. Put the courgette into a bowl with the shallot, ginger, chilli, mustard, egg and coriander, and mix well
- Season and shape into two patties
- Heat the vegetable oil in a frying pan and fry the patties for 5 minutes, turning once, until golden and crisp
- Serve in toasted pitta breads with lettuce
