Recipe Of The Week – Sophie’s Salad

This is an ideal main course for weight loss. This is a salad that Sophie makes regularly – the contents can be altered according to what is in season and available. Add toasted pine nuts, chopped apple or a handful of seeds if on a weight maintenance programme.

 

Serves 2 with some leftover for tomorrow’s lunch

Ingredients

  • 1/3 head of broccoli
  • 1 courgette, sliced
  • 1/3 bunch of asparagus
  • 1/3 bag of french beans
  • 1/3 bag of green beans
  • 1/2 bag of salad leaves
  • Fresh herb leaves (basil, mint, parsley e.t.c.), torn or chopped
  • Bunch of watercress
  • 4 spring onions, sliced
  • 8 olives, sliced

Anything else you would like that is green and edible from the garden e.g. nasturtium leaves

  • 1/3 pack of feta cheese, cubed
  • Olive oil
  • Coarse black pepper
  • Lemon or lime juice

Method

  1. Steam the broccoli florets, courgette slices, french beans, green beans and asparagus whilst preparing the other ingredients
  2. In a large bowl, put the salad leaves, fresh herb leaves, watercress, spring onions, olives and the edible leaves from the garden (if using)
  3. Once the steamed vegetables are ‘al dente’, rinse under cold water briefly and add to the bowl (these can be left to cool or can be added warm, according to personal preference)
  4. Add the feta cheese. Drizzle on some olive oil, a good sprinkling of coarse black pepper and a squeeze of lemon or lime juice
  5. Mix carefully with hands or servers
