Recipe Of The Week – Cherry & Rocket Salad
This salad makes a quick and easy lunch. The addition of goats cheese adds a touch of creamy luxury. Also ideal as an accompaniment to your BBQ.
Quantities to be decided by you, depending on how many you are feeding.
- Ripe cherries, washed and pitted
- Rocket leaves
- 2 tsp red wine or sherry vinegar
- Extra virgin olive oil
- Salt and pepper
- Soft, mild, rindless goat’s cheese
- Handful of hazelnuts, lightly toasted
- Step 1
Toss the cherries and rocket leaves together.
- Step 2
Dress with the vinegar and a glug of olive oil, then season well.
- Step 3
Add a few blobs of goat’s cheese and scatter the hazelnuts over the top.
