Recipe Of The Week – Rocket and Grapefruit Salad with Grilled Fish
This dish is a great recipe for a warmer time of year. The lighter evenings lend to the delicate flavours throughout this salad and we’re sure it’ll go down well with everyone.
- Whisk together all of the ingredients for the dressing. Place both fish fillet in a shallow dish and pour over half of the dressing, turning the fish to coat.
- Plate up the rocket leaves, grapefruit segments and apple slices.
- Grill the fish fillets for 2-3 minutes (depending on thickness) per side, until cooked through and place on top of the rocket salads.
- Sprinkle with fresh mint leaves and halved olives before pouring on the remaining half of the dressing and serve immediately.
