Recipe Of The Week – Peach and Mozzarella Salad
This is our twist on the very often seen tomato and mozzarella salad. By replacing the tomato with peaches, you lift the dish and give it a fruity kick! The rocket and lemon will help balance the sweetness, whilst the mozzarella will add creaminess. Honestly, it’s delicious!
- Ripe peaches, sliced
- Mozzarella, roughly torn into chunks
- 1 lemon
- Extra virgin olive oil
- Salt and black pepper
Quantities to be decided by you, depending on how many you are feeding.
- On a large plate, mix together the peach slices with the chunks of mozzarella
- Add a couple of handfuls of rocket, a squeeze of lemon juice and a glug of olive oil, pouring over any juices from when you sliced the peaches
- Season well and serve immediately
